Ingredients

4 Tbls  
butter
1 tsp  
garlic, minced
1 tsp  
dried rosemary
1 tsp  
dried sage
1  
4-6lb turkey breast
2 cups  
reduced-sodium chicken bouillon
1 Tbl  
water
2 tsps  
flour
1 1/2 tsps  
Dijon-style mustard
1/2 tsp  
salt
1/4 tsp  
pepper

Directions

  1. In small bowl combine butter, garlic, rosemary and sage. Evenly spread butter mixutre over turkey breast.
  2. In shallow roasting pan (10x15x2") fitted with adjustable "V" meat rack, place turkey breast on rack.
  3. Roast at 350° F for 30-35 minutes.
  4. Add 1/2 cup broth to pan and baste turkey breast with juices.
  5. Turn breast quarter turn.
  6. Turn breast every 20 minutes and baste until all sides are golden brown and meat thermometer (inserted in thickest portion away from bone) registers 170-175° F.
  7. Remove breast and cover with foil to keep warm.
  8. Strain pan juices and skim off fat.
  9. Add broth to equal 1 cup and return to roasting pan.
  10. In small bowl, combine water and flour. Whisk into broth mixture.
  11. Over medium heat, cook 5-7 minutes or until slightly thickened. Stir in mustard, salt, pepper and cook until heated throughout.
  12. To serve, slice turkey and serve with sauce.
