- nonstick vegetable spray
- 2

- mushrooms, chopped
- 1/4 cup
- onion, chopped
- 1/4 cup
- yellow bell pepper, chopped
- 1/4 cup
- zucchini
- 1/4 cup
- cherry tomatoes
- 1 Tbl
- chopped black olives
- 2 Tbls
- Feta cheese

- basil leaves, for garnish
- Spray pan with nonstick spray and cook mushrooms, onions, bell peppers, zucchini and tomatoes over medium-heat until tender.
- Add egg mixture and stir until eggs are cooked.
- Top with black olives, Feta cheese and basil.
