- 1/2 cup
- uncooked quinoa
- 8
- egg whites
- 4
- eggs
- 1 1/4 cups
- nonfat milk
- 1/2 tsp
- salt
- 1/4 tsp
- pepper
- 1/2 tsp
- cayenne pepper
- 1 Tbl
- garlic
- nonstick vegetable spray
- 2 cups
- chopped spinach
- 1/2 cup
- Romano cheese
- 1/2 cup
- Parmesan cheese
- Pre-heat oven to 350º.
- Rinse quinoa and drain.
- Whisk eggs, milk, salt, pepper, cayenne pepper, garlic and quinoa in medium bowl.
- Spray 8x8” baking dish with nonstick spray and pour in ingredients.
- Stir in spinach and gently mix ingredients until quinoa settles.
- Bake for 45 minutes, covered.
- Sprinkle with Romano and Parmesan cheese and bake, uncovered another 10-15 minutes.
