Ingredients

1/2 cup  
uncooked quinoa
8  
egg whites
4  
eggs
1 1/4 cups  
nonfat milk
1/2 tsp  
salt
1/4 tsp  
pepper
1/2 tsp  
cayenne pepper
1 Tbl  
garlic
 
nonstick vegetable spray
2 cups  
chopped spinach
1/2 cup  
Romano cheese
1/2 cup  
Parmesan cheese

Directions

  1. Pre-heat oven to 350º.
  2. Rinse quinoa and drain.
  3. Whisk eggs, milk, salt, pepper, cayenne pepper, garlic and quinoa in medium bowl.
  4. Spray 8x8” baking dish with nonstick spray and pour in ingredients.
  5. Stir in spinach and gently mix ingredients until quinoa settles.
  6. Bake for 45 minutes, covered.
  7. Sprinkle with Romano and Parmesan cheese and bake, uncovered another 10-15 minutes.
