Ingredients

4  
eggs
1/4 cup  
nonfat milk
1/3 cup  
shredded Gruyere cheese
1 Tbl  
parsley
 
salt and pepper to taste
 
nonstick vegetable spray
1/4 cup  
chopped onions
1/2 cup  
chopped tomatoes
1/4 cup  
diced zucchini

Directions

  1. Whisk together eggs, milk, parsley, salt, pepper and 1/2 of the cheese.
  2. Spray oven-safe pan with nonstick spray and cook vegetables over medium heat.
  3. When vegetables are tender, pour egg mixture over top and cover with a lid.
  4. Reduce heat and cook for an additional 10-12 minutes on low.
  5. Top with remaining cheese and broil until brown (3-4 minutes).
