Ingredients

2  
heads iceberg lettuce
2  
red apples, cored and thinly sliced
1/2 lb  
grapes
2  
cantaloupes, or other melon, seeded, pared and cut into chunks
4 Tbls  
pomegranate seeds (optional)
1 cup  
plain low-fat yogurt
1/2 cup  
unsweetened orange juice concentrate, thawed

Directions

  1. Core, rinse and thoroughly drain lettuce.
  2. Using a stainless steel knife, cut into bite-sized chunks.
  3. Arrange apple slices, grape clusters and melon wedges on lettuce.
  4. Sprinkle pomegranate seeds on top.
  5. Chill salad in refridgerator while preparing dressing.
  6. Combine lowfat yogurt and orange juice concentrate.
  7. Mix dressing with fruit.

    Makes 8 servings. Per Serving: 1 Vegetable, 2 Fruits
