Ingredients

servings instant mashed potato flakes
 
water
2  
eggs
1 tsp  
sugar
1/4 tsp  
ground cinnamon
1/2 cup  
chopped apple (such as Golden Delicious, Granny Smith, Winesap or Rome Beauty), peeled
2 Tbls  
chopped pecans
1 Tbl  
reduced-fat sour cream (optional)
1 Tbl  
applesauce (optional)
1 Tbl  
pecan halves (optional, for garnish)

Directions

  1. Omitting butter and salt, prepare potatoes with water according to package directions.
  2. In medium bowl, beat together eggs, sugar, and cinnamon until well blended.
  3. Beat into potatoes. Stir in apple and chopped pecans.
  4. For each pancake, spoon 1/3 cup batter onto hot. lightly greased skillet or griddle (380ยบ F for electric griddle).
  5. Cook both sides until golden brown.
  6. Serve hot plain or with sour cream and pecan halves (if desired).
