Ingredients

2 cups  
fresh seeded tomatoes, chopped
1/3 cup  
red onion, finely chopped
1/4 cup  
fresh basil, chopped
2 Tbls  
olive oil
1 Tbl  
Equal® Spoonful
1 Tbl  
fresh oregano, chopped
1 tsp  
fresh garlic, minced
 
salt and pepper to taste
1/2 cup  
feta cheese, crumbled

Directions

  1. Combine all ingredients, except feta cheese.
  2. Let stand at room temperature about 30 minutes to allow flavors to blend.
  3. Just before serving, stir in feta cheese.
  4. Toss with hot cooked pasta or use on toasted Italian bread for bruschetta.
