For an easy-to-make healthy meal, check out this Tuscan Style Soup recipe. Combine eggplant, water, no-salt added canned tomatoes, sliced mushrooms, garlic, zucchini, dried Italian seasoning and Parmesan cheese.

Ingredients

  • 1   cup(s)  water
  • 1 1/4   cups(s)  eggplant, peeled and cubed
  • 1   (14.5 oz) can no salt added whole tomatoes, undrained and chopped
  • 1/2   cup(s)  mushrooms, sliced
  • 1   garlic clove, minced
  • 3/4   cup(s)  zucchini, chopped
  • 1/2   tsp  dried Italian seasoning
  • 1/4   tsp  salt
  • 1/8   tsp  pepper
  • 1/4   cup(s)  parmesan cheese

Directions

  1. Combine the first 9 ingredients in a large saucepan, stirring well.
  2. Bring to a boil. Cover, reduce heat and simmer for 25 minutes or until vegetables are tender.
  3. Top with parmesan cheese.
