Take your Jenny's CuisineĀ® Sunshine Sandwich to the next level with this recipe. Roasted red pepper adds a kick of flavor to the already delicious dish.

Ingredients

  • 1  Jenny's CuisineĀ® Sunshine Sandwich
  • 1/4  cup  roasted red pepper, diced
  • 1  Tbsp  celery, sliced
  • 1  tsp  red onion, minced
  • 1/4  tsp  chipotle chili puree (canned)
  • 2  tsp  flaxseeds
  • 1/2  tsp  chili powder
  • 1  tsp  scallions, chopped (for garnish)
  • 1/2  tsp  extra virgin olive oil
  • 1/2  tsp  balsamic vinegar
  • 1/8  tsp  lemon juice
  • 1/8  tsp  honey
  • 1/2  cup  mixed greens
  • 1/4  cup  shredded carrot

Directions

  1. Prepare Sunshine Sandwich as directed on package.
  2. For the chili, combine roasted red pepper, celery, onion, chipotle chili puree, flaxseeds and chili powder in a medium bowl. Mix well and place on top of Sunshine Sandwich.
  3. For the salad, toss together the mixed greens and carrots.
  4. For the dressing, whisk together the olive oil, balsamic vinegar, lemon juice and honey in a small bowl. Toss with the salad and serve on the side of the Sunshine Sandwich.
  5. Garnish with chopped scallions.
