Enjoy a colorful, vegetarian salad that is perfect for a summer picnic or lunch. This delicious salad recipe is easy to make and only 167 calories per serving!

Ingredients

  • 6  large tomatoes
  • 3  can(s)  black beans (15 oz)
  • 1/2  cup(s)  canned corn - drained
  • 1/2  cup(s)  celery - chopped
  • 1/2  cup(s)  green bell pepper - chopped
  • 1  green onion - chopped
  • 3  Tbsp  balsamic vinegar
  • 1  Tbsp  fresh cilantro - finely chopped
  • 1/8  tsp  chili powder
  • 1/8  tsp  freshly ground black pepper
  • 1  Shredded lettuce
  • 1  Cilantro leaves for garnish

Directions

  1. Cut each tomato in half and scoop out the centers.
  2. Discard tomato pulp and set aside tomato shells.
  3. Mix beans, corn, celery, green pepper and green onion in a medium sized bowl.
  4. Gently stir in vinegar, cilantro, chili powder and pepper.
  5. Cover filling and tomato shells separately and chill.
  6. When ready to serve, place 2 tomato halves on each of 6 plates lined with a bed of shredded lettuce.
  7. Spoon an equal amount of bean mixture into each tomato half.
  8. Garnish with Cilantro leaves.
