Indulge in a tasty, low-fat dessert with this Strawberry Apple Cobbler recipe. Minimal prep time leaves more time to enjoy a slice of cobbler. This recipe uses apple juice, lemon juice, apples, egg whites, rolled oats, strawberries and frozen-apple juice.

Ingredients

  • 1   cup(s)  apple juice (not concentrate)
  • 1   Tbsp  lemon juice
  • 1/2   tsp  cinnamon
  • 2   Tbsp  flour
  • 6   cup(s)  tart apples, peeled, cored and sliced
  • 3   egg whites
  • 1/2   cup(s)  frozen apple juice concentrate, thawed
  • 1   cup(s)  whole-wheat pastry flour
  • 1/3   cup(s)  nonfat dry milk
  • 1/3   cup(s)  rolled oats
  • 3   cup(s)  strawberries

Directions

  1. Preheat oven to 425°F.
  2. Whisk the apple and lemon juices with the cinnamon and 2 Tbls flour.
  3. Place apples in an 11 x 9-inch baking dish.
  4. Pour the flour-juice mixture over the apples and put In oven for 25 minutes.
  5. Meanwhile, whip egg whites until soft peaks form.
  6. Add the thawed frozen apple juice concentrate and whip until they stand in stiff peaks.
  7. Mix together the whole-wheat pastry flour, dry milk and rolled oats and gently fold in to the stiff egg whites.
  8. The batter will fall somewhat but do not over mix.
  9. Reduce the oven temperature to 350°F.
  10. When apples are baked, stir in the strawberries.
  11. Drop the batter by large spoonfuls over the fruit and bake an additional 25 minutes, or until browned.
  12. Serve warm or at room temperature.
