Load up on lean protein with this Stir-Fried Turkey with Crunchy Vegetables recipe. This low-fat dish also adds soy sauce, ginger, sesame oil, green cabbage, onions, celery, green bell pepper, garlic, carrots and brown rice.

Ingredients

  • 2  tsp  cornstarch
  • 3  Tbsp  soy sauce
  • 1  tsp  vegetable oil
  • 3  thin slice(s)  fresh ginger
  • 1  pound(s)  turkey breast cutlets, cut into 1/2 inch cubes
  • 1  tsp  sesame oil
  • 1  cup(s)  green cabbage, shredded
  • 1/2  cup(s)  onion, sliced
  • 1  cup(s)  celery sticks, cut to 1-inch long
  • 1  cup(s)  green bell pepper sticks, cut to 1-inch long
  • 1  cup(s)  carrot sticks - cut to 1-inch long
  • 1  tsp  garlic, chopped
  • 1/4  tsp  ground black pepper
  • 2  cup(s)  brown rice, cooked

Directions

  1. Mix the cornstarch with 4 tablespoons cold water in a small bowl to form a thin paste.
  2. Stir in the soy sauce and set aside.
  3. Heat the vegetable oil in a large, nonstick skillet or wok over high heat.
  4. When the oil is hot, add the ginger and stir-fry 1 minute.
  5. Remove the ginger with a slotted spoon and discard.
  6. Add the turkey to the skillet and stir-fry 3 minutes.
  7. Use a slotted spoon to transfer the turkey to a bowl, and set aside.
  8. Reduce the heat to medium-high and add the sesame oil.
  9. Add the cabbage, onions, celery, bell pepper, carrot, garlic, and black pepper to the skillet and stir-fry 3 minutes.
  10. Stir the sauce to recombine and add to the skillet along with the turkey and its juices and stir-fry 2 minutes.
  11. Divide the rice and stir-fry mixture among 4 dinner plates.
