Ingredients

  • 2   large sweet potatoes, peeled and cubed
  • 1   Tbsp  olive oil
  • 1   tsp  cinnamon
  • 1/2   tsp  nutmeg

Directions

  1. Preheat oven to 400°F. Peel and cube the sweet potatoes. Toss with the olive oil to coat.
  2. Spread potatoes out on a 9 x 12 pan. Sprinkle with cinnamon and nutmeg.
  3. Bake for 30- 40 minutes, or until the tops are lightly browned.
