Ingredients

  • 3/4  lb(s)  beef round tip steaks, 1/8-in to 1/4-in thick
  • 1  can(s)  can vegetable broth (14 oz)
  • 1 1/2  cup(s)  water
  • 1 3/4  cup(s)  mushrooms - sliced
  • 1  cup(s)  carrots - julienned
  • 3  Tbsp  low-sodium soy sauce, divided
  • 2  Tbsp  red wine vinegar
  • 3/4  tsp  crushed red pepper
  • 1  ounce(s)  angel hair pasta (approx 1/4 cup) - uncooked, broken up
  • 2  Tbsp  cornstarch, dissolved in 1/4 cup water
  • 1/4  cup(s)  green onion - sliced

Directions

  1. Stack beef steaks, cut lengthwise into 1/4-inch strips.
  2. In 3-quart saucepan, combine broth, 1 1/2 cups water, mushrooms, carrots, 2 tablespoons low-sodium soy sauce, vinegar and red pepper.
  3. Bring to a boil; reduce heat and simmer uncovered for 5 minutes.
  4. Add pasta; continue simmering 5 additional minutes.
  5. Stir in cornstarch mixture.
  6. Bring to a boil; cook and stir 1 minute.
  7. Stir beef into soup.
  8. Immediately remove from heat.
  9. Cover and let stand 5 minutes.
  10. Stir in remaining 1 tablespoon low-sodium soy sauce and green onions.
  11. Serve immediately.
