Snow Pea Salad is a tasty starter for any meal. This recipe uses fresh snow pea pods, water chestnuts, parsley, green onion and a garlic-ginger vinaigrette. Only 72 calories per serving and .2 grams of fat.

Ingredients

  • 2  Tbsp  rice wine vinegar
  • 1  Tbsp  low-sodium soy sauce
  • 1/4  tsp  ground ginger
  • 1/4  tsp  garlic powder
  • 1  cup(s)  fresh snow pea pods
  • 1  (8 oz) can water chestnuts, drained
  • 1  Tbsp  chopped fresh parsley
  • 1  green onions, chopped (optional)

Directions

  1. Combine first 4 ingredients in a jar; cover jar tightly and shake vigorously.
  2. Wash snow peas; remove ends. Arrange snow peas in a vegetable steamer over boiling water. Cover and steam 3 minutes; drain and rinse with cold water.
  3. Combine snow peas, water chestnuts and parsley in a small bowl. Pour vinegar mixture over snow pea mixture; toss lightly. If desired, garnish with chopped green onion.
