  • 3  Tbsp  fresh lime juice
  • 1  Tbsp  cornstarch

  • 1  tsp  salt
  • 1  nonstick cooking spray
  • 1/3  cup(s)  nonfat milk
  • 1/3  cup(s)  lowfat smooth peanut butter
  • 1  Tbsp  soy sauce
  • 1  Tbsp  packed dark brown sugar
  • 1/2  tsp  cayenne powder
  • 1/4  cup(s)  water
  • 1  Tbsp  fresh lime juice

Directions

  1. To outdoor grill, lightly spray unheated grill rack with nonstick cooking spray.
  2. Prepare grill for medium direct heat cooking.
  3. Combine 2 tablespoons lime juice, cornstarch, cayenne, and salt in a large mixing bowl.
  4. Add medallions and toss to coat.
  5. Thread medallions onto skewers.
  6. Place medallions on track over medium hot grill.
  7. Turn frequently for even cooking and browning.
  8. Cook 20 minutes or until meat is no longer pink.
  9. Serve with Peanut Dipping Sauce.
  10. Combine milk, peanut butter, soy sauce, brown sugar, cayenne, and water in small saucepan.
  11. Heat for 8-10 minutes.
  12. Remove from heat.
  13. Stir in lime juice.
  14. Serve with Skewered Turkey.
