Ingredients

  • 1  lb(s)  raw shrimp, cleaned
  • 1  tsp  sesame oil
  • 1  pkg(s)  fresh stir-fry vegetables (14 oz)
  • 1  cup(s)  fresh bean sprouts
  • 1  tsp  cornstarch, dissolved in 1/2 cup low-sodium chicken broth
  • 2  tsp  low-sodium soy sauce
  • 1  tsp  fresh lemon juice
  • 1/8  tsp  ground ginger
  • 1/8  tsp  garlic powder
  • 2  green onions - sliced diagonally
  • 1  Nonstick vegetable spray

Directions

  1. Rinse shrimp in cold water and pat dry with paper towels; set aside.
  2. Heat sesame oil in a wok or a large frying pan that has been coated with nonstick vegetable spray over high heat.
  3. When oil is hot, add the vegetables and bean sprouts.
  4. Cook uncovered, stirring continuously, for 3 to 4 minutes until colors of vegetables brighten.
  5. Push vegetables aside in wok or pan and add shrimp.
  6. Add cornstarch mixture along with soy sauce, lemon juice, ginger and garlic.
  7. Stir-fry 2 to 3 minutes until shrimp turns pink and becomes opaque.
  8. Serve at once, garnished with green onion slices.
