Enjoy the provincial flavors of Italy with our Rustic Tomato Soup recipe. This reduced-fat soup combines low-sodium broth with hearty garlic, fresh onions, tomato, oregano and hints of Parmesan. Only 125 calories per serving.

Ingredients

  • 1   tsp  extra-virgin olive oil
  • 1/2   cup  onions, chopped
  • 1/2   tsp  garlic, minced
  • 1 1/2   cup(s)  canned diced tomatoes, with liquid
  • 1/2   tsp  dried oregano
  • 1/4   tsp  salt
  • 1 1/2   cup(s)  nonfat, reduced-sodium chicken broth
  • 4   baguette slices, cut 1/2-inch thick on the diagonal, toasted or grilled
  •   Parmesan cheese shavings

Directions

  1. Lightly coat a 4 to 5 quart pot with cooking spray. Add the oil and place over medium heat. Stir in the onions and garlic and cook 5 minutes, stirring often. Stir in the tomatoes, oregano, salt, and broth. Bring the soup to a simmer and cook uncovered, 20 minutes, stirring occasionally. Remove from heat.
  2. Place 1 slice of toasted bread in the bottom of each of 4 wide, shallow soup bowls. Ladle the soup over the bread. Top with a few shavings of Parmesan.
