Ingredients

  • 1  pound(s)  pork tenderloin
  • 1  Salt and ground black pepper
  • 1  tsp  vegetable oil
  • 1/2  cup(s)  evaporated fat-free milk
  • 2  Tbsp  Dijon mustard
  • 3  green onions, sliced

Directions

  1. Cut pork into 1-inch-thick slices.
  2. Place pork between two pieces of plastic wrap.
  3. Flatten to 1/4-inch thickness using meat mallet or rolling pin.
  4. Season with salt and pepper.
  5. Heat oil in large skillet over medium-high heat.
  6. Add pork; cook on each side for 3 minutes or until browned and cooked through.
  7. Remove from skillet; set aside and keep warm.
  8. Reduce heat to low.
  9. Add evaporated milk; stir to loosen brown bits from bottom of skillet.
  10. Stir in mustard and green onions.
  11. Return pork to skillet.
  12. Cook for 1 to 2 minutes or until sauce is slightly thickened, turning pork to coat with sauce.
