Ingredients

  • 1  pound(s)  pork tenderloin, cut into 8 equal pieces
  • 1/4  cup(s)  slivered almonds
  • 1/4  cup(s)  cup flour
  • 2  tsp  butter
  • 1  Tbsp  lemon juice
  • 1  salt
  • 1  pepper

Directions

  1. Place each tenderloin piece between two pieces of plastic wrap and gently press to 1/8-inch thickness, set aside.
  2. In hot skillet, toast almonds until golden, stirring constantly.
  3. Remove almonds and reserve.
  4. Lightly coat tenderloin cutlets with flour and saute over medium heat in butter until golden brown on both sides.
  5. Remove cutlets to platter.
  6. Add lemon juice and almonds to pan, heat and pour over cutlets.
