Turn your Jenny's Cuisine® Tuna Salad Kit into a Mediterranean Chop Chop Salad with a few extra steps. This recipe uses Mediterranean inspired flavors like lemon, oregano, yogurt and garlic.

Ingredients

  • 1  Jenny's Cuisine® Tuna Salad Kit
  • 1/2  tsp  lemon juice
  • 3  oz  nonfat plain yogurt
  • 1  Tbsp  white vinegar
  • 1/2  tsp  honey
  • 1/4  tsp  garlic, minced
  • 1/2  tsp  dill
  • 1/4  tsp  oregano
  • 1/2  cup  spring lettuce mix
  • 1/4  cup  mushrooms, chopped
  • 1/4  cup  cucumber, chopped
  • 1/4  cup  artichoke hearts (canned in water), quartered
  • 2  tsp  red onion, diced
  • 4  Kalamata olives, pitted and sliced

Directions

  1. For the lemon yogurt dressing: In a bowl whisk the lemon juice, yogurt, vinegar, honey, garlic, dill and oregano together well.
  2. For the salad: Toss together the lettuce, mushrooms, cucumbers, artichoke hearts, onions and olives. Add the diced peaches from the salad kit and 1 Tbsp of the lemon yogurt dressing.
  3. Place the salad in the middle of the plate. Scoop tuna on top of salad with crackers placed in front.
  4. Drizzle remaining dressing on top.
