For a refreshing and light appetizer, try our Hawaiian-Style Lettuce Wraps with Avocado recipe. Lettuce wrapped vegetables are topped with a light teriyaki and green onion sauce.

Ingredients

  • 4   Bibb lettuce leaves
  • 1/3   cup  bean sprouts
  • 2   Tbsp  teriyaki sauce
  • 1   green onion, chopped
  • 1/3   cup  carrots, shredded
  • 1/3   cup  cucumber, shredded
  • 1/2   avocado
  •   spicy mustard (optional)

Directions

  1. Mix the bean sprouts, 1 Tbsp teriyaki sauce, green onion, carrots and cucumber in a bowl.
  2. Evenly divide mixture into lettuce leaves.
  3. Cut avocado into four slices, place one slice onto each lettuce wrap and roll up.
  4. Serve Chilled with the remaining teriyaki sauce and spicy mustard for dipping.
