Ingredients

  • 1  pound(s)  boneless, skinless chicken breasts
  • 3/4  tsp  Italian seasoning
  • 1/4  tsp  ground black pepper
  • 3  tsp  olive oil, divided
  • 1/2  red bell pepper, cut into strips
  • 1/2  green bell pepper, cut into strips
  • 1/4  tsp  garlic powder
  • 3  Tbsp  balsamic or red wine vinegar
  • 2  tsp  honey

Directions

  1. Place chicken breasts between 2 pieces of wax paper or plastic wrap and pound to 1/2-inch thickness.
  2. Sprinkle on both sides with Italian seasoning and pepper.
  3. Heat 2 tsps oil in large skillet over medium heat.
  4. Add chicken breasts and cook 4 minutes on each side or until no longer pink in center.
  5. Remove to serving dish and keep warm.
  6. Heat remaining 1 tsp oil in skillet.
  7. Add red and green bell peppers and garlic powder.
  8. Cook 3-4 minutes, stirring constantly, or until bell peppers are tender.
  9. Spoon over chicken.
  10. Add vinegar and honey to skillet.
  11. Cook 1 minute, stirring constantly.
  12. Spoon over chicken and bell peppers.
