Ingredients

  • 1/2  pound(s)  sweet Italian sausage
  • 1  cup(s)  fresh mushrooms, sliced
  • 1  large  carrot, shredded
  • 1/2  cup(s)  green onions, sliced
  • 4  eggs, beaten
  • 1/4  cup(s)  milk
  • 1/2  tsp  salt
  • 1/2  tsp  black pepper, ground
  • 3  cup(s)  cooked rice
  • 1/4  cup(s)  parmesan cheese, grated

Directions

  1. Cook sausage in large skillet over medium heat until browned.
  2. Drain, return meat to skillet.
  3. Add mushrooms, carrot, and onions; cook 2 minutes.
  4. Combine eggs, milk, salt and pepper in small bowl.
  5. Reduce heat to medium; pour egg mixture over vegetables.
  6. Cook, stirring, 1 1/2 to 2 minutes.
  7. Add rice and cheese; stirring to separate grains.
  8. Heat 2 minutes.
  9. Serve immediately.
