Ingredients

  • 1/2  head romaine lettuce - torn into pieces
  • 2  cup(s)  chopped tomatoes
  • 1  small  cucumber, thinly sliced
  • 1  small  onion, thinly sliced
  • 1  small  green bell pepper, seeded and cut into 1/4 inch strips
  • 4  ounce(s)  reduced-fat crumbled feta cheese
  • 2  tsp  extra-virgin olive oil
  • 1/4  cup(s)  red wine vinegar
  • 1  Tbsp  water
  • 1  garlic clove, finely minced or pressed
  • 1/2  tsp  crushed dried oregano
  • 1/8  tsp  freshly ground black pepper

Directions

  1. In a large bowl, toss together lettuce, tomatoes, cucumber, onion and green pepper.
  2. Top with cheese.
  3. In a separate small bowl whisk together oil, vinegar, water, garlic, oregano and black pepper.
  4. Pour over salad and gently toss.
