Savor the flavors of the Mediterranean with this Greek Spinach Salad recipe. This low-cal recipe uses spinach, cucumber, bell pepper, olives, almonds, feta and a red wine herb dressing.

Ingredients

  • 1  bunch spinach, washed, trimmed and crisped
  • 1/2  tsp  english cucumber, thinly sliced
  • 2  tomatoes, cut into wedges
  • 1  green bell pepper, cut into strips
  • 1  red bell pepper, cut into strips
  • 24  Greek olives, or as desired
  • 3/4  cup(s)  whole natural almonds, toasted
  • 1  cup(s)  crumbled feta cheese
  • 3  Tbsp  red wine vinegar
  • 1  clove garlic, minced
  • 1/2  tsp  dijon-style mustard
  • 1/2  tsp  oregano
  • 1/4  tsp  marjoram
  • 1/4  tsp  thyme
  • 1  Tbsp  Olive Oil
  • 1  salt and pepper, to taste

Directions

  1. Toss together all ingredients except feta cheese.
  2. Arrange on serving platter.
  3. Top with crumbled cheese to serve.
  4. To toast almonds, spread in an ungreased baking pan.
  5. Place in 350°F oven and bake 5 to 10 minutes or until almonds are light brown.
  6. Stir once or twice to assure even browning.
  7. Note that almonds will continue to brown slightly after removing from oven.
