Flavors of the Mediterranean combine to create this Greek Salad recipe. Combine lemon juice, olive oil, cucumber, tomato, oregano and nonfat feta for a simple, easy-to-make salad. Only 80 calories per serving.

Ingredients

  • 1/2  tsp  salt
  • 1  Freshly ground black pepper
  • 1  Tbsp  fresh lemon juice
  • 1  Tbsp  extra-virgin olive oil
  • 2  cup(s)  cucumber -- scrubbed, unpeeled and unseeded, quartered lengthwise, and cut crosswise into 1/2-inch pieces, about 1/2 pound
  • 2  cup(s)  tomatoes, cored and cut into 1/2-inch cubes
  • 3/4  cup(s)  fresh oregano, chopped
  • 3/4  cup(s)  nonfat feta cheese, crumbled

Directions

  1. Whisk the salt, several grindings of pepper, lemon juice, and oil in a large bowl.
  2. Add the cucumber, tomatoes, oregano, and feta.
  3. Toss gently, but well.
