For the perfect dish to accompany your healthy entrée, try this Garlic Rosemary Mashed Potatoes recipe. Potatoes are flavored with garlic, butter, rosemary, evaporated milk, Parmesan cheese and salt and pepper.

Ingredients

  • 6  medium (about 2 lbs) potatoes, peeled and cut into 1-inch chucks
  • 4  large cloves garlic, peeled
  • 1/4  cup(s)  (1oz) freshly grated Parmesan cheese
  • 1  Tbsp  butter or margarine
  • 1  Tbsp  chopped fresh rosemary or 1 tsp dried rosemary, crushed
  • 1/3  cup(s)  (5 fl.oz can) low-fat, 2% evaporated milk
  • 1  dash(es)  salt
  • 1  dash(es)  ground black pepper

Directions

  1. Place potatoes and garlic in large saucepan. Cover with water; bring to boil. Cook over medium-high heat for 15 to 20 minutes or until potatoes are tender; drain.
  2. Return potatoes and garlic to saucepan and beat with hand-held mixer until combined.
  3. Add cheese, butter and rosemary; beat until smooth.
  4. Gradually beat in evaporated milk until fluffy.
  5. Season with salt and pepper.
