  • 2  cup(s)  onions, chopped
  • 3  Tbsp  garlic, chopped
  • 1  cup(s)  green bell peppers, seeded and chopped
  • 3/4  tsp  salt
  • 1/4  tsp  freshly ground black pepper
  • 3  Tbsp  chili powder
  • 2  tsp  cumin
  • 1  cup(s)  canned crushed tomatoes
  • 3  cup(s)  nonfat, reduced-sodium beef broth
  • 3  cup(s)  canned dark-red kidney beans, rinsed and drained
  • 1  cup(s)  celery, chopped
  • 2  cup(s)  carrots, peeled and shredded
  • 1  cup(s)  zucchini, chopped
  • 1  Tbsp  hot-pepper sauce

Directions

  1. Lightly coat a 4- to 5-quart pot with cooking spray.
  2. Heat the pot over medium-high heat until hot.
  3. Crumble the beef into the pot and add the onions, garlic, bell peppers, salt, and pepper.
  4. Cook, stirring occasionally, until the beef loses its raw color.
  5. Drain the liquid from the pot.
  6. Reduce the heat to medium and stir in the chili powder and cumin.
  7. Add the remaining ingredients and 1 cup water, and bring to a boil, stirring.
  8. Cover the pot, reduce the heat, and simmer 45 minutes, stirring occasionally.
