Ingredients

  • 1  pound(s)  fresh peas, shelled (or 10-ounce package frozen green peas)
  • 2  green onions, chopped
  • 1/8  tsp  thyme
  • 1  pinch(es)  sugar
  • 2  cup(s)  chicken broth
  • 1  cup(s)  milk
  • 1  Salt and pepper, to taste
  • 1  Nutmeg, freshly grated to garnish
  • 1  Shredded carrot, to garnish

Directions

  1. Place peas, green onions, thyme, sugar and broth in medium saucepan.
  2. Bring to a boil, reduce heat, cover and simmer 10 minutes.
  3. Let mixture cool slightly.
  4. Puree in batches, in food processor or blender.
  5. Stir in milk, season with salt and pepper.
  6. Cover and refrigerate 4 hours or overnight.
  7. Garnish servings with freshly grated nutmeg and shredded carrot.
