Impress your dinner guests with this masterful southern French dinner entrée. Chicken Provencal uses chicken breasts, olive oil, onion, garlic, white wine, tomatoes, olives, organo and parsley. Only 165 calories per serving. Bon appetit!

Ingredients

  • 1  Tbsp  extra-virgin olive oil
  • 4  skinless, boneless chicken breast halves, 4 to 6 ounces each
  • 1/2  cup(s)  onion, chopped
  • 1  tsp  garlic, chopped
  • 1/2  tsp  salt
  • 1  pinch(es)  ground black pepper
  • 1/2  cup(s)  dry white wine
  • 1 1/2  cup(s)  canned diced tomatoes, with liquid
  • 1/4  cup(s)  kalamata or other brine-cured olives, pitted and chopped
  • 1  Tbsp  fresh oregano, chopped
  • 1  Tbsp  fresh flat-leaf parsley, chopped

Directions

  1. Heat the oil in a large nonstick skillet over medium heat.
  2. Add the chicken, onions, garlic, salt, and pepper.
  3. Sautee until the chicken is lightly browned, about 3 minutes on each side.
  4. Add the wine and bring to a boil.
  5. Add the tomatoes, olives, and oregano and return to the boil.
  6. Reduce the heat to low, partially cover, and cook about 6 minutes, or until the chicken is no longer pink.
  7. Transfer the chicken to a platter and keep warm.
  8. Cook the sauce 2 to 3 minutes, or until it has thickened slightly.
  9. Spoon the sauce over the chicken and sprinkle with parsley.
