Add some fiber to your diet with this Bulgar and Vegetable Stuffed Peppers recipe. Combine bulgar, vegetable broth, bell peppers, celery, scallions, carrots, Parmesan cheese, thyme, oregano and cayenne.

Ingredients

  • 1  cup(s)  vegetable broth
  • 2/3  cup(s)  bulgur
  • 4  red, yellow, or orange bell peppers, about 2 pounds
  • 1/2  cup(s)  celery, finely chopped
  • 1/4  cup(s)  scallions, chopped
  • 1/2  cup(s)  mushrooms, about 2 ounces - diced
  • 1/2  cup(s)  carrots - peeled and shredded
  • 1/4  cup(s)  Parmesan cheese, grated
  • 1/2  tsp  dried thyme
  • 1/2  tsp  dried oregano
  • 1/2  tsp  salt
  • 1  dash(es)  cayenne pepper

Directions

  1. Bring the broth and bulgur to a boil in a 2-quart saucepan, stirring constantly.
  2. Reduce the heat and simmer, covered, 10 minutes.
  3. Fluff with a fork and put in a large bowl.
  4. Preheat the oven to 375┬░F.
  5. Lightly coat an 8-by-8-inch baking dish with cooking spray.
  6. Cut the tops off the bell peppers and remove the core and seeds.
  7. Cut a very thin slice off the bottom of the bell peppers so they will stand upright.
  8. Cook the peppers in a large pot of boiling water, 3 minutes.
  9. Remove the peppers and drain, inverted, on paper towels.
  10. Combine the remaining ingredients with the bulgur.
  11. Divide the mixture among the peppers.
  12. Place the peppers upright in the baking dish and bake 15 to 20 minutes.
