Ingredients

  • 2/3  cup(s)  all-purpose flour
  • 1/2  tsp  baking powder
  • 1/4  tsp  baking soda
  • 1/4  tsp  salt
  • 1/4  cup(s)  sugar
  • 1  egg white, lightly beaten
  • 1/4  cup(s)  plus 2 tablespoons plain nonfat yogurt
  • 2  tsp  vegetable oil
  • 1/2  tsp  vanilla extract
  • 1/3  cup(s)  fresh or frozen blueberries, thawed
  • 1  nonstick vegetable spray

Directions

  1. Combine first 5 ingredients in a medium bowl; make a well in center of mixture.
  2. Combine egg white and next 3 ingredients.
  3. Add to dry ingredients, stirring mixture just until dry ingredients are moistened.
  4. Fold in blueberries.
  5. Spoon batter into a 6- x 3- x 2-inch loaf-pan coated with nonstick vegetable spray.
  6. Bake at 350ºF for 35 to 40 minutes or until a wooden pick inserted in center comes out clean.
  7. Remove from pan immediately, and let cool on a wire rack.
