Dazzle your dinner guests with our low-fat Apple and Brown Rice Pilaf dish. Golden Delicious apples are paired with herbs, broth, onion and rice to create a flavor-packed side dish.

Ingredients

  • 1/2  onion, minced
  • 1  Tbsp  vegetable oil
  • 1 1/2  cup(s)  quick-cooking brown rice
  • 1 1/4  cup(s)  low-sodium chicken broth
  • 1/2  tsp  dried thyme
  • 2  cup(s)  Golden Delicious apples, cored and diced
  • 2  Tbsp  parsley, chopped
  •   salt and pepper, to taste

Directions

  1. Sauté onion in oil in nonstick skillet until tender.
  2. Stir in rice and brown slightly.
  3. Stir in broth, thyme, salt and pepper; bring to a boil.
  4. Cover tightly and reduce heat; simmer 15 minutes.
  5. Remove from heat; stir in apples and parsley.
