Satisfy Your Mexican Food Cravings with Jenny Craig

Happily, our nutritionists and chefs have your back—so there are breakfast, lunch, dinner and snack options offering a south-of-the-border vibe. Here are some creative tips for maximizing your Mexican-themed meals with Jenny Craig.

Give basics a boost
A day that begins with and Egg, Cheese & Turkey Sausage Burrito can ONLY end well! Add a tablespoon of plain, fat-free Greek yogurt (a great sour cream substitute) and a tablespoon of salsa for an extra-satisfying start. Our Cheesy Chicken Enchilada is flavorful without being too spicy—if you like a bit of heat, try tossing some canned corn in your favorite hot sauce and sprinkle over the top. Our Southwest Style Chicken Fajita Bowl and Baja-Style Chicken Quesadilla are both wonderful with a roasted red pepper relish; it’s low in calories, PLUS sodium- and fat-free to boot!

Spice up other Jenny Craig faves
Our popular Turkey Chili only needs a little boost to make it feel like a Mexican meal. Add a few chopped onions and a tablespoon of fat-free sour cream. Perfecto. Our Breakfast Scramble and Cheddar Cheese Omelet don’t need much encouragement, either. Mince green, red and yellow peppers with some purple onion and chopped cilantro, then toss in lime juice for an amazing “free food” topper. Bonus: like tomatoes, bell peppers are rich in lycopene, a powerful antioxidant. You can even convince your Chocolate Lava Cake to get into the Cinco de Mayo spirit! Just mix ½ teaspoon cinnamon and a pinch of cayenne powder with one packet of stevia. Sprinkle over warm cake, and enjoy.

Guilt-free and SO good
Trust us on this: just about every Mexican dish is even more delicious when topped with fresh pico de gallo (sometimes called salsa fresca). Here’s a quick recipe for you to try: start by dicing four firm Roma tomatoes and one medium-sized sweet onion. Mince one Jalapeno pepper, two cloves of fresh garlic and four teaspoons of cilantro, and toss in the juice of two limes. Enjoy with our Black Bean Taco Chips!
