Enhance Your Jenny's Cuisine® with Farmers Market Produce
With summer officially underway, a brilliant array of fruits and vegetables are at their flavorful peak—so it’s the perfect time to make a visit to your local farmers market! Grab a straw hat, some sunscreen and a few shopping totes…then check out these four easy ideas for freshening up your favorite Jenny’s Cuisine® meals.
1. Zucchini This veggie can make any meal feel like a breezy summer day. It’s delicious to steam, roast or grill and mix into Jenny’s Cuisine. Try it with Cheesy Potatoes & Chicken, Creamy Chicken & Corn Chowder or Southwestern Chicken with Rice. It’s also a great side dish, sauteed with cooking spray, garlic, onion and herbs. Enjoy withMacaroni & Cheeseor Mesquite Chicken.
2. Bell peppers These are rich in Vitamin A, which can strengthen your immune system and protect your skin from environmental damage, plus beta carotene for healthy eyes and strong vision. Extra bonus: they’re delicious with several of your favorite Jenny Craig meals! Halve and dice a pepper, then sauté it with a bit of cooking spray for a healthy addition to our Cheddar Cheese Omelet, Beef Chow Meinor Sesame Chicken. Feeling adventurous? Cut the tops off two peppers, remove spines and seeds and fill with Jenny’s Cuisine Turkey Chili. Bake at 350 degrees for 45–50 minutes and top with salsa for an ultra-satisfying meal.
3. Tomatoes These are loaded with lycopene, which is another important nutrient that can help reduce the effects of sun exposure on the skin. Tomatoes’ high water content also makes them an extra-refreshing accompaniment during the dog days of summer. Grape tomatoes pack a huge flavor punch despite their tiny size; we like slicing a handful and adding to our Personal Pizza during the last 30 seconds of heating. They also add zing to pasta dishes like Chicken Fettuccini and Chicken Carbonara. Heirlooms are amazingly flavorful this time of year. Try adding a thick slice to your Beef & Cheese Slider or Turkey Burger.
4. Berries This fruit is nature’s multivitamin; they’re loaded with antioxidants, fiber, Vitamin C, potassium and folate, making them a healthy addition to any meal. Add any berry to your Jenny’s Cuisine breakfast cereal, or spread sliced strawberries over our Cinnamon French Toast. Blueberries are a natural complement to our Blueberry Mini Loaf or Blueberry Pancakes & Veggie Sausage. And fresh raspberries pair perfectly with any of our chocolate desserts—including our Chocolate Walnut Brownie and Triple Chocolate Cheesecake.http://www.eatright.org/Public/content.aspx?id=6442475026&terms=bell%20peppers http://www.eatright.org/kids/article.aspx?id=6442464980&terms=blueberries
