Jenny Craig to 'Cook Up' Healthy New Entrees with Help From Celebrated Chef
"Conscious Cuisine" Author Chef Cary Neff to Develop Healthy and Flavorful Recipe Ideas for Jenny Craig's Growing List of Menu Creations
CARLSBAD, Calif., Mar. 3 - Jenny Craig, Inc. today announced the hiring of cookbook author and spa chef Cary Neff as culinary consultant. In this new role, "Chef Neff" will collaborate with Jenny Craig registered dietitians to develop new cuisines and cookbook recipes as well as incorporate creative variations into existing Jenny Craig foods.
Neff, who is best known for his book Conscious Cuisine, as well as his work as the executive chef at La Costa Resort & Spa, specializes in developing savory dishes and succulent sauces that look as good as they taste. In all of his recipes, Neff maintains a nutritional balance of low sodium, fat and added sugar as a way to keep high-end cuisines healthy.
Neff's five-star dishes, such as Saffron-Chive Sauce, Carrot Mousse and Layered Spinach, are a few of the recipes for which he has been recognized. In fact, many of his creations have been featured in major culinary publications, including Bon Appetit, Gourmet, Food and Wine and The New York Times Magazine. He has also appeared as a special guest on "The Oprah Winfrey Show."

As part of his role with Jenny Craig, Neff will design new seasonal recipes for the company's growing list of more than 75 cuisines. He will also work closely with Jenny Craig registered dietitians to develop upcoming cookbooks with creative themes, such as Elegant Entertaining and Healthy Holidays, to promote the balance between lifestyle, taste and health. Jenny Craig clients can look for his flavorful recipes and inspired cuisine variations as early as fall.

A Chicago native, Neff will continue to serve as the executive chef at La Costa Resort & Spa in California, where he leads the resort's 50-person kitchen staff and is responsible for the menu development of three dining venues. Neff is an active member of the International Association of Culinary Professionals, Chef's Collaborative and the American Culinary Federation's Apprentice program.
