Spiced Pears

Prep Time: 10 minutes
Cook Time: 20-25 minutes

Ingredients:
  • 10 Bartlett Pears
  • 6 cups water
  • 1 cup distilled vinegar
  • 2 Tbls sugar
  • 32 whole cloves
  • 8 small slices fresh ginger root
  • 6 cinnamon sticks
Directions
  1. Peel, quarter and core pears to measure about 10 cups.
  2. Combine remaining ingredients in large kettle. Bring to a boil and simmer juices for 5 minutes. Then add pears and return to boil. Simmer 15-20 minutes longer.
  3. Serve warm or refrigerate and serve chilled. Makes 10 servings.

Per Serving: 115 calories, 29g carbohydrate, 0.7g protein, 0.3g fat, 0mg cholesterol, 8.1mg sodium

Decadent Chocolate Mousse Cones

Prep Time: 10 minutes

Ingredients:
  • 25 mini waffle cones
  • 1 1/2 cup fat-free half and half
  • 1 small box of sugar-free chocolate pudding
  • 2 Tbls sugar-free chocolate syrup
  • 1 container fat-free frozen whipped topping
  • 1 Tbl chopped hazelnuts
  • 1 Tbl dark chocolate shavings
Directions
  1. Whisk together half and half and pudding mix until smooth and creamy, about 2 minutes.
  2. Stir in chocolate syrup. Fold in whipped topping, reserving about a quarter cup for topping. Gently stir until well blended.
  3. Chill for at least 1 hour before serving. Divide into 25 mini waffle cones. Top with a dollop of whipped topping, pinch of hazelnuts and pinch of chocolate shavings before serving. Makes 25 servings (one cone).

Strawberry Thumbprint Cookies

Prep Time: 6 minutes
Cook Time: 10 minutes

Ingredients:
  • 1 (17.5 oz) package oatmeal or sugar cookie mix
  • 1 cup regular oats, uncooked
  • 1/3 cup water
  • 1 tsp vanilla extract
  • 1 egg white
  • nonstick vegetable spray
  • 1/4 cup strawberry jam
Directions
  1. Combine first 5 ingredients; drop by 2 level teaspoonfuls 1 inch apart onto cookie sheet coated with vegetable spray.
  2. Press center of each cookie with thumb, making an indentation; fill with 1/4 teaspoon jam.
  3. Bake at 375ºF for 10 minutes or until golden brown. Makes 52 servings.
