I really enjoyed my lunch today and wanted to share with all of you !!!
I sauted eggplant and onion and then added garlic and 1 can of diced tomatoes. Seasoned the eggplant with 1 packet of sweet-n-low, fresh basil, crushed red pepper flakes and s&p. Then poured the corn chowder over the eggplant ...
It was FANTASTIC!!!
