What does everyone like for their vegetable serving with dinner?

I almost always have steamed broccolli. I throw a few florets in a zip lock bag with some Salt Free Mural of Flavor and cut a slit in the ziplock for some steam to release for 1 minute. Yum!

I'd love to hear what other people prepare for their veggie serving every night. I need some new ideas.

I do too.... I really do not like veggies, or like alot of salt on them, and salt is a big NO NO..

So, I usually just have a big salad at lunch, or i drink part of a V8 juice can.
Sometimes I have mushrooms, i just throw them in a pan with some water, garlic powder, and lemon pepper and just cook them that way, they are ok....but not great.

i really need some new ideas.

i have never been a veggie person! ugh.

This is such an awesome topic and a great way to learn more to volumize your foods with.

My favorite veggies are carrot sticks (I eat them with low sodium peanut butter as a snack once in a while), broccoli, cauliflower, cucumbers, pickles, tomatoes, lettuce. I can easily add volume to any of the dinner meals this way, but it keeps me satisfied at lunch and throughout the day as well just to keep them handy.
My turkey burger tastes more like a turkey burger with a pickle spear, tomato slice, and lettuce. I eat it with my cheese curls most of the time as well so it's like a burger and fries meal, only much healthier.
I love the cashew chicken and the macaroni and cheese with added green beans and almonds that you can steam in the bag from Green Giant. I add chopped (very fine) cauliflower when I have the cookout chicken and beans (kinda tastes like mashed potatoes that way, very helpful biggrin.gif).
I love the steam in bag broccoli spears as well and can have them at anytime throughout the day to help tide me over. No sauce needed.

My favorite veggie is fresh zucchini sliced like chips when they are cold they make a great snack, also love jicama fresh adds a little variety. Baby carrots are also a great snack, but mostly its the prepackaged salads that have mixture of lettuces add in some tomatoes and love the crunch of bean sprouts on top. Enjoy.

Hello again, just found a new recipe I can't wait to try, thought I would share it has 64 cal, fat 1.9g(st fat 0.3g), carbs 11g It is Italian Summer Squash Ingredients: 1 tbsp. olive oil, 3 cloves garlic, minced 1 cup thinly sliced sweet onion(about 1 medium) 3 medium zucchni 3 medium yellow squash 1 can (14.5 z) fire-roasted diced tomatoes, undrained 1/2 tsp salt 1/2 tsp black pepper 2 tbsp fresh basil leaves, thinly sliced. Heat oil over medium heat. Add the garlic saute 30 seconds add the onion saute until softened. Slice zucchini and squash into 1" pieces. Stir in zucchini, squash, tomatoes, salt and pepper. Cook until tender and the liquid is slightly thickened and bubbly 6-8 min. Sprinke with basil. Enjoy. Let me know how you like it.

I have been taking frozen veggies (brocolli or mixed Tuscan veggies) and putting a nice serving in a pie plate sprayed with Pam, adding some seasonings and then baking in the oven along with my entree.

Meh, salt is tasty. Unless you have some sort of medical issues, salt away!

I do lots of things to my veggies. If I want something oriental style, I'll use sesame oil, ponzu, grated ginger and garlic, sometimes with rice vinegar too. Sometimes sauteed with balsamic vinegar, garlic and olive oil. Various herbs and such - tomato and basil salad drizzled with vinegar and olive oil is great, and sometimes you can work in some buffalo mozzarella or boconccini cheese. Lemon and salt is a good combo. I like to make curried green beans sometimes, that's pretty tasty. Sauteed zucchini and summer squash is nice, and I can always add mushrooms and garlic to everything. Especially with summer, I like grilling veggies. Either right on the grill (good for big chunks of eggplant or whatnot), or wrapped in a tinfoil "packet" and seasoned. Broiled veggies with portabello mushrooms (again, balsamic vinegar and olive oil) is to die for, especially if you add goat cheese.

I like to roast asparagus in the oven on 350 I spray it with pam add salt and chopped garlic. I cook for about 15-20 min with my meal.
I also cook cauliflower with fat free chicken broth and chopped garlic cook till soft and mash.
I usually cook my veggies in chicken broth so it's more like a soup and very filling.

Tonight I took a package of frozen artichoke hearts and cooked them on the stove top while the oven preheated. Then I put them in the oven with some PAM and S&P. Was a great side dish to my lasagna.

I used to steam fresh veggies or buy frozen mixtures from the store like maybe an oriental mix.

Then I got bored and changed to roasting some fresh broccoli, brussels sprouts (cut in half), zucchini and yellow squash in the oven with a little canola oil, some butter spray Pam, lite salt, pepper, garlic powder, dried onion flakes and paprika for 30 mins. I add other veggies, too, if the mood strikes me like asparagus, snow peas and red onion. I'm thinking artichokes might be good, too. Having a variety instead of just one veggie at each meal has kept my interest.
