It's probably okay. But..... I think the idea is to add a salad with one meal, a veggie with the other, so that you finish your meal satisfied, and not still hungry, looking for more. I mean, I know my lunch salads are huge, and probably way more than what they would minimally want me to eat, but I get those dinner veggies in, too.
Is there a reason that you DON'T want to eat dinner veggies? How about just getting bags of baby carrots and munching on them during the day. That would count.
