I found a copy of Jenny Craig's Diabetic Cookbook onlin at amazon.com The copy I found was in brand new condition and I only paid $2 for it. The book is loaded with all kinds of low-fa, reduced-sugar, and sugar-free recipes. I haven't tried this dressing recipe or anything else in the book yet because I just got it yesterday (04/07/09).

Ingredients:
1/2 cup tomato juice
2 Tablespoons lemon juice of vinegar
1 Tbls minced onion
1/8 tsp salt
1/3 tsp dried oregano
dash of garlic powder
dash of pepper

Nutrition information:
Serving size 2 Tbls
Carbs: 2gm
Protien: trace
Fat: Trace
Calories: 8

YES - PLEASE do share the recipes if you like them.

i make a Raspberry Vinaigrette Dressing (made of all UNLIMITED foods) to change things up and i love it:

1/2 c. raspberry vinegar
1/4 tsp. salt
1/4 tsp. pepper
4 tsp. splenda
2 garlic cloves
2 tsp. Worcestershire sauce
1 tbsp. Dijon mustard

Mix all together - makes 1/2 cup. Keep in fridge with tight fitting lid.

I made this 2 weeks ago and LOVE, LOVE it. I am so picky about my salad dressings and hate salads in general. This is even better the longer it stays in the refrig. Thanks so much for sharing!!!!!
