Okay-so I have done Jenny Craig off and on for years, and now i am getting married in four months and have a major weight loss goal. I am back to the planned menus, and I have been craving going out to eat but resisting. Tonight I made a side of spinach for my jenny cuisine that was better than going to an italian restaurant!!!

Here's how . . .

My meal tonight was chicken carbonara ( I am sure you could do this with others though)

I started with a pan sprayed with PAM's olive oil spray-one clove of garlic and chopped red onion. I sauted that for about two minutes until the onion was soft, and the garlic was slightly browned. Then I added the spinach, salt and pepper and a teaspoon of real olive oil (my fat for the day).

It was SOO good, I haven't been on these message boards in years, but had to share this! I can't tell you how good it was. And the bacon from the carbonara was the perfect compliment. It was really satisying .

wow! I love spinach too. That recipe sounds great. I can't wait to try it. Congratulations on your upcoming wedding. I have been married to a great guy for almost 27 years. Yee-haw!!!

Sounds so good think I am going to try it tonight...Yum! I just called my center to go in and sign up on the 19th...Was on Jenny in 2005 to get ready for my wedding....Did great went from a 12++ to a solid size 7 jeans....but it has crept up again....Darn it! Thanks for the outstanding sounding recipe....I have been cooking out of weight watchers cookbook and cooking light mag.....always on the lookout for new EASY good stuff....Rose wink.gif

This might be a silly question... do you add spinach or was it from a tin? Sounds great!!!

I do that too, I think I put every dinner on its bed of spinach and something else..lol ONLY FRESH SPINACH people...NO CANNED...OK I am yelling sorry....its just that fresh spinach gets a bad wrap....but canned spinach is soooo gross and slimy...lol OK I have vented....... I feel better now... Annr

LOL that's so hysterical!!!!!!!!!!!!! I feel like you do, NO canned spinach!! I also do the bed of spinach under most of my meals or zuchinni,peppers,onions,mushrooms and spice it up to match the meal. Chile powder and cilantro with mexican items, basil/oregano tomatoes on italian. Just have to be creative with the vegies!!

I use frozen spinach and do the same thing - I also add in slices of fresh mushrooms - delicious.

It also works with frozen green beans - add mushrooms to them as well. That is how I get my green in my lean and green meals.

I saute fresh garlic in about a cup of olive oil an pour it in fresh spinach and cook it down. Oh wait that is how I use to eat it and gained 50 lbs. I need to stop that.
Your spinach idea is really really good.

i have lasagna planned for tomorrow, so I'm going to add this to my lasagna, to make it more like spinach lasagna, cant wait, sometimes I get in the same ruts with my veggies, I also add mushrooms to frozen green beans and use a packet of hidden valley ranch dressing as a seasoning, not mixed with anything, one packet to a pound of green beans, its a recipe i got from my sister you are also supposed to add bacon, at thanksgiving I added real bacon bits to it, but for everyday I just use the green beans mushrooms and hidden valley sauteed either in olive oil or pam spray with olive oil depending if I have a fat serving left
