So, it seems that many people don't like the soups.... This is my first week and I am going to have the gumbo soup tomorrow. Any suggestions for improving it? I have to add 2 starches, 1/2 c. milk, 1 meat, and 1 fat each day because I am a breastfeeding mom. So, I have a little room to work with!

I happen to LOVE the soups. Is this the first time you have tried it?
I heat them, as is, in the microwave at work so I don't usually volumize. My JCC did mention for ME to make sure I have a salad with it. I usually only have salad later in the day but have started incorporating more salads at lunch when I am at work.
Since you have to add 2 starches, 1/2 c. milk, 1 meat, and 1 fat each day because you are a breastfeeding mom, there aren't too many additional items to add to the gumbo soup beside more vegetables.
You could make it a larger serving by adding vegetables (canned tomatoes), cooked rice, or more chicken based on what your other meals for the day are.

Hmm, the Gumbo is one of my favorite lunches. I order it every week, and that serving plus a big glass of water fills me just fine until the afternoon snack.

I pump up the flavor by add some Emeril seasoning and some extra okra. I buy a version of Emeril's from a local spice shop which makes it with even less salt than Emeril does. Frozen sliced okra is just one of the frozen veggies I keep in stock in the freezer.
Additional sliced peppers are good too. If you have protein to use that day, add shrimp!
