Hi, do any of my fellow veggies have any ideas to make the food more exciting. Since the foods that I can eat are very limited Im looking for any ideas. Also ideas to use the free foods more? Im getting very bored of the food and would appreciate any ideas you might have. Also do you seem to be losing weight on JC?

Venessa, spagetti squash is the BEST volumizer...and according to "ask the dietician" it's a free food. Someone had suggested using it as a base for a couple of the non-vegetarian items (Southwestern Chicken and Rice for example), but I also use it alone. I cook it up, top it with thick salsa and a dollop of fat free sour cream, it's truly delicious. Perhaps it could be used as a base for some of the veggie foods (or alone?). My daughter is also on JC, and she's vegetarian, the choices are so limited it's sad. I can't imagine her sticking to it for too long if they don't re-introduce the veggie burger, or add more non-pasta veggie dishes.

The chicken and vegetable potstickers are made with soy chicken.

Ah, that's what it says on the front of the box. When you check the ingredients, there's feathered chicken in it, too. I can't imagine why they would do that -- and indicate "soy ch'cken" on the front, where it's most visible. Use one or the other..

Making soups with the free veggies is the best. Unlimited combinations and seasonings. I made Hot and Sour last week with napa cabbage, carrots and daikon radish. Today, I'm making Carrot and Ginger.

Easiest thing ever: Add various fresh herbs, single or combo, to everything. Brightens up the flavors and makes it taste (almost!!) homemade.

Favorite: sauté onions in a wee bit of oil or Mazola spray, add spinach until it wilts, add the Cheese Ravioli and heat through. Fills up the plate and makes it taste completely different.

Do the same thing with different types of mushrooms. Really filling.

Sauté any veg or combo (for instance, eggplant, onions and peppers) and mix with the Pasta Fagioli.

Sauté any veg or combo, add a little veg broth and tomato paste and let it thicken.

Now that the weather is cooler, I'll be roasting everything, from cauliflower to turnips, again combining to makes tons of color.

I've been diggin' grilling on the George Foreman grill machine. Marinate in a bit of dressing any veg, then grill. Portobella (sp?) mushrooms are the best. So good!

I posted a kohlrabi salad on the recipe thread.

The pizzas are really easy to dress up.... artichokes hearts, caramelized onions, peppers, basil, arugula, tomato slices.

Trader Joe's has a wide variety of jarred sauces, toppings, condiments that are fat-free or low-fat and low-sodium. Favorites are the roasted pepper and artichoke, and new favorite tomato chutney. These are great pizza toppers, and can be added to anything to change the flavor.

Good luck! Have fun! I do believe it makes the weight loss slower, but it's still loss. Obviously, what I was doing previously wasn't working and JC is, even if slower.

Thank you so much everyone for your help!!! I'm excited about trying some new things!
