My DH and I just started JC this weekend and tonight we're trying the fajitas for the first time. I already plan to sautee up some additional peppers and onions, but what else can I serve with the fajitas to bulk up our meal?
I thougth of a salad, but I'm having a salad for lunch (w/ the chicken salad) and my DH is also have a side salad at lunch and I really don't want us to start hating salad.
Any suggestions?

Chayote squash, if you can find it, is nice with Mexican-style dishes. If you aren't familiar, it has a similar taste and texture to zucchini, IMO. I confirmed with the Dietitian awhile ago that it is indeed a free veggie, and not starch.
Along those lines, try zucchini or summer squash. I find broccoli or shredded cabbage really filling and nice in a sautee, as a variation from steaming.

I would add mushrooms to the fajitas also
and pair it up with an eggplant or carrot side dish

Zuchinni, green beans, roasted bell peppers, asparagus... anything you like!
Why not make a soup with broth, a touch of lime juice, onion, tomato, zuchinni or summer squash, celery, and perhaps just a tablespoon of corn (shared between 2 people its not enough to have to count). Top it with a sprinkle of fresh cilantro. OK, I'm drooling now...

Oh yeah - I'll totally add mushrooms...why on earth didn't I think of that too! Thanks.
I guess veggies is the winner. I'll whip together something. I have zuchinni and other stuff at home so I guess that will win out. Maybe I'll add a bit of salsa to the saute pan to just make the flavor match the 'mexican' theme.

I love zucchini sauted with some salsa and cilantro _ i will eat a whole zucchini on my own

I make a great salsa salad with fresh tomatoes, onions, peppers, jicama, cilantro and lime. I use halved cherry tomatoes, so it's really rough-cut, not chopped like salsa. Yummy with all kinds of things! Full recipe linked below...

I have stir fryed bean sprouts, napa cabbage and/or regular cabbage, onions, pepper, then added the fajita kit MINUS the seasonings and finished the cooking process. Seasoned with light soy sauce right at the end. Then I stuffed it all into warned tortillas. Overall effect was a little like Chinese mu shu.

This isn't a side dish - but I eat the fajita meal like a BIG quesadilla. I put extra veggies in it, a bit of cheese to hold it together (ff free or a milk exchange or skip the anytime bar) - spray some pam in a skillet, heat on both sides and it's a huge plateful. Then I put ff sour cream and salsa on top. Yum!

Congratulations,on your new WL Program w/ JC. I add more red peppers,onions,and broccoli to the Fajatias,add 1 serving of Kraft RF or FF Cheese, RF or FF Sour Cream,& hot salsa...I steam the veges or saute them w/Pam...add some chicken broth w/ ceyenne pepper & garlic,after my entree is done baking in the oven,I pour it in the vege-seasoned broth....put it on the tortillas, add cheese,sour cream & hot salsa..it adds volume and it is very good. Try it that way with a chopped tomato, and 1-2 cups of Romaine lettuce,,(or make another sald with all of it and eat the tortillas on the side) I use salsa as a salad dressing in all my salads...I hope this helps..Good-Luck to you! I made my fajita into a big fajita salad. I added soy sauce and seasame oil to the veggies cooking. Than I put it all over romaine lettuce and added some fat free ranch veggie dip I had. It was good. Next time I'm getting salsa and mushrooms to add to it.

try using 'delmonte' tomatoes sauce with jalpenos, great with veggies for mexican dinner!
i make a mixture of broccoli tops only, zucchini, yellow squash, onion, mushrooms and the jalpeno tomoto sauce, great with the frajitas, BTW: i don't use the peppers and onions included with the meal, they are very rubbery -- and as long as you are making extras, i would elimate the package ones entirely! i know, then all you are left with is the chicken and tortillas, OK, but the meals tastes much better with your OWN peppers and onions IMO

Last night I added about a cup of finely shredded cabbage into the mix while I was sautéing and them I made up a mango-jicama salad based upon a
Tyler Florence recipe off of Food Network.
