I really want to credit whomever on this board gave me the idea to revamp the chicken sandwich this way, but I can't find the thread and I don't remember who told me to do this! So just know that the credit for this revamp is not mine.
I HATED the chicken sandwich the first time I tried it, which was by cooking and eating it according to the instructions on the box. Until I tried this!
First, I tossed out the packet of sauce that came with it. I think that's part of what made me hate it so much the first time. Then I microwaved the chicken breast for 90 seconds to thaw it. Took it out and shredded it with two forks, and added it to a pre-heated skillet with not quite 1 tbsp of Kraft BBQ sauce (which is a little less than 20 calories for that amount.) Sautee that for about 2 mins until hot, and in the meantime, put the bun in the toaster oven to make it warm and slightly crispy outside.
Pile the shredded BBQ chicken onto the bun and voila! It tastes GOOD! And all the meat doesn't even fit on the bun this way, so I ate the overflow with a fork. It was delicious! Next time I will add some diced onions and sliced green pepper to the chicken mixture. YUM!

Oooh, that sounds good. I also don't like the Chicken Sandwich as is. I also toss the sauce, and then cook the chicken, slice it up and put it on top of my salad. Then I toast the bun and sprinkle it with a little Smart Balance butter spray and garlic salt.

I too , HATED the Chicken Sandwich until I picked up some ideas here. I revamped this idea , by using a little wing sauce and making my own coleslaw with a little bit if fat free mayo, vinegar , sweet & low and a splash of fat free milk. I otast the bun & pile it all on !!!! Talk about an AWESOME lunch.!!

I just had the chicken sandwich yesterday and after eating it I thought never again would I have another one, but after hearing some yummy ideas I will have to give it another chance. Thanks so much for sharing your ideas. Can't wait to try it again with the bbq sauce.

These are yummy ideas, but I stopped ordering the chicken sandwich. The chicken in it was so tough and stringy. I gave it multiple "chances", thinking it was just a bum one I got.
I'll use a small frozen boneless one from home and try your ideas instead. And a "lite" bun.

Thanks for the idea--I have one in my freezer I have been avoiding for awhile!!
I did try this one time: I found it in the Creative Recipes Book. Saute some peppers, onions, and mushrooms and then add some tomato sauce. Cook the chicken either in the microwave or in the saute pan. Toast the bun and add some butter spray and garlic powder. Viola--Chicken Cacciatore with Garlic bread. Add a salad and its a pretty darn good lunch!
I'll definitely try the pulled BBQ chicken sandwich this weekend!!

Yes! Thank you for this suggestion. We HATED the chicken sandwich the first time we tried it (I am doing this with my boyfriend)- and then we tried it this way. It is one of our favorite weekend lunches now (we eat this when we get back from our weekly walk to the movies and back!)

OH MY GAWD...I tried the pulled BBQ Sandwich...wow what a great meal!! Chicken Sandwich is on my list again!! I also added some cut up peppers and onions and saute them them while I cooked the chicken in the microwave. Awesome sandwich--Thank you to whoever posted this idea!!!
I also told everyone at my Centre about it!!

mmmmm, Jaime... thank you for the bbq idea. Sounds really good. I make mine into a Chicken Ceasar salad...and toast the bun.. spray with no cal butter spray and a little sprinkle of garlic salt for garlic toast. Just cook up the chick about 1min in the micro, be careful..too much cooking will make it dry. Cut it up and place on a bed of salad greens. Add 1 tbls of low fat ceasar, and if you like, the little packet that comes with the chicken sandwitch. Sometimes I will only garlic one half of the bun, and spread enuf low sugar jam on the other to make 1 limited food for a little sweet after lunch.

Oh my goodness...thank you, thank you, thank you!!!!!! The shredded barbecue chicken sandwich idea...FABULOUS. I was looking for something to do with two (2) that I have been pushing around in my freezer for weeks. I added a little sliced onion and dill pickle slices...WOW! Next, I will try making it into a grilled chicken salad using the toasted bun as croutons/garlic bread.
Phew...I enjoyed the chicken sandwich as it was, but got bored with it. Now, I can order chicken sandwiches again with all new possibilities. Thanks for the ideas!

Try this...it is like philly chicken sandwich, my sister and i do this all the time. we usually have a dinner for lunch and then do the chick sand for dinner since we are home and not at work.
saute onions and green pepper in pam spray
microwave chicken per package instructions.
Chop chicken into small bites
add to the saute pan with peppers and onions.
sprinkle in some paprika
stir and top with a 1/2 slice of low fat cheese, cover to melt.
toast the bun and top
again, too much for the bread so we eat the remains with a fork.
very very good, will definately try the bbq nextime.
no way i can eat the chick sand without dressing it up!
ps if you like mushrooms add those to saute too.

Thank You! I will definitely try this idea too. Can't go wrong with cheese, peppers and onions. Good idea swapping lunch for dinner to have the "dressed up" chicken sandwich.

I'm gonna have to try this! Funny thing. I always say to myself, I sure wish the turkey burger had the mustard sauce instead of the chicken sandwich. So, now, I'll just swap sauces between the sandwiches, and all will be right with the world. I may have to do the cook/shred/sauce prep at home, and then container it to bring to work.

All these sound like great ideas. I am going to try all of them. What I did was put he chicken cutlet in a non stick frying pan and brown it a little to make it soft. Then I bought the Heinz FAT FREE gravy ( I used beef) and poured it on top while it was cooking. Then I put a can of mushrooms in to cook. And while I was doing this I toasted the roll. It was deliciou! I just bought 3 more yesterday....You can do this with all kinds of spices. I found the chicken was not as stringy and much more tolerable cutting it with a knife and fork.
AND the Heinz gravy FAT FREE was only 20 calories for 1/4 cup. Try it....If you want to have a vegetable with it you can use squash. I put the spray butter in it and some splenda brown sugar. It tastes like mashed sweet potatoes!

Thank you for the yummy recipie for the chicken sandwich! OH my it was sooo good! I sauteed mushrooms & red pepper then added the shredded chicken with the BBQ suace, sauteed it all together, toasted the bun then piled it on top! THere was so much I ate it open face so I had 2! YUMMY!
I will definitly make this again! I hadn't bought the chicken sandwich because it was not my favorite but now I LOVE IT! This is a great weekend lunch when you are home, especially now with the cold weather!

Thanks for the tip! In my opinion, the chicken sandwich can't be eaten the way the directions say to. My co-worker just started JC recently and couldn't even have more than 1 bite of the chicken sandwich. She had to throw it out because she was so grossed out by it. I usually heat it up in the microwave and then brown it a bit in a pan. But I have to try it with the bbq sauce! Sounds yummy! Thanks again for the tip!
