I've been on the program a couple months and am about 1/3 of the way to my GW. However, I haven't lost in the last couple weeks because I've been cheating. Every time I open my freezer I cringe. I am so sick of all the bland food. I normally eat a lot of ethnic and spicy food. I find all the pizza/ pasta very boring. I even doctor the food up so much it is almost unrecognizable and still dread eating it.
I think I need to add more meals on my own, even though I am not halfway yet. Some nights I cook some tofu in soy sauce and steam broccoli. Any other ideas? Can I just make a store bought veggie burger since they no longer offer this? It is also hard because my consultant is not a vegetarian so she doesn't have any suggestions.
How are the other vegetarians sticking to the program?

I just tried baby eggplant the other day. I sliced it up very thin and then threw it in the skillet with some pam and a couple of sprays of I can't believe it's not butter, some garlic, pepper and Dill. I let some of them get crispy. It was very good. I have a yellow zuccini I'm going to try this way too.
I know what you mean about tired of the food. I love the JC food, although I've only been on it for 9 days, and the last two days I haven't had access to my food. But I work 3rd shift and don't have time to cook so I usually bring in carrots or cuccumbers. I'm not a big veggie eater to begin with and there aren't that many veggies out there that I like...the baby eggplant was a big risk for me.
But I hope this helps with an idea.

Just tried the yellow zuccinni done in the skillet with garlic/pepper and dill. It was sweet and had a bit of a salty taste to it. I sliced it very thin and got it good and brown on both sides so they were crisp. I threw them in a container and took them to work. Of course they didn't stay crisp, but they were still very good.

I just joined the online community and saw this post. I've been on JC for a couple of months and am so sick of the vegetarian options, too. I lost 11 lbs. in about 5-6 weeks and was thrilled. The past 3 weeks have been a struggle and I've gained back a pound. My JC consultant isn't a vegetarian either and doesn't understand. I have a lot of weight to lose and want this program to work for me. I'll try the ideas posted here, but I'm open to any suggestions. There's no doubt JC needs more vegetarian foods other than pastas and pizza.

I share your comments. I recommend either subscribing to vegetarian times or purchasing vegetarian meals from other sources such as Amy's organics, Lean Cuisine etc. Vegeterian times also has a website with loads of recipes and on both the website and in their magazine they include nutritional information for all of their recipes so you can be sure to not go over recommended calorie count, get the right amount of protein etc. Just be careful to watch serving sizes and divide the portions evenly. Amy's organics has the most "vegetarian friendly" frozen meals and are comparable in price to Jenny's food, in some cases cheaper (they have veggie meatloaf and salisbury steak meals that are pretty tasty). Depending on where you live your local food store might not carry these you might have to check health food stores.

i understand where you are coming from. i have been voicing my request for more veggie options as well as more whole grains in the menu. use the food feedback forum to voice your concerns and requests. i have a vegetarian consultant perhaps your center has someone more sensitive to your life style choice. remember, vegetarian lifestyle is healthier and more environmentally conscious which is most commendable. hang in there!
