Hi there,
I have to pack and carry my lunch. I am not near a microwave nor a fridge. Does anyone have great healthy suggestions besides the tuna salad and crackers. Help!

I cook the chicken sandwich and turkey burger at home and put them in a bag with a water bottle filled with ice. It works pretty well.

Is it possible for you to make your lunches a meal on your own? If so, maybe you would want to talk with your consultant about how you could plan for lunch. Or, is it possible for you to talk to your employer about getting a microwave for staff? Just some thoughts. Let us know what you decide to do.

Have you thought about using a Thermos? They work very well for soups, chilis and softer, saucy stuff like the noodle and pasta dishes. You can heat them up at home and bring them in the Thermos. The newer technology that Thermoses are made with these days makes them surprisingly compact, lightweight and sturdy, and they keep things quite hot for several hours. That's what I would do if I didn't have the use of a microwave.

I have made the food the night before ( things that worked well... the chicken sandwich and pizzas) to take along. I really wish there were more take and go selections that did not require cooking. I think the salad kits are pretty awful, and I tried everything I could to make them more palatable.

If you can plan to make that a meal on your own- items that are great and do not need to be refrigerated, and are found in the aisles of the grocery store- not in refrigerated sections:
the small canned white meat chicken (swanson brand is good)
white albacore tuna (same) or pouches of tuna/salmon
Dole fruit cups- peaches, mixed, pineapple, pears
Low fat triscuits or other crackers
Flat-out bread or whole wheat mini pita bread (to make a sammie)
Laughing Cow cheese wedges (a spreadable cheese food product- low cal/low fat and YUMMY)
There is always:
baby carrots, apples, bananas- other whole fresh fruits- pears, grapes, etc. to supplement lunch items above.

Take/make time to go thru your local grocery store- to specifically look for items like the above. It is fun to make these "finds" in things you like to eat that also fit within the plan.

A 16 oz. bottled water, frozen the night before could be used in a lunch bag to keep other items cold- and will melt down into water to drink during the day. My DBF used to do that for his work/lunch and break time use of cold water on the job site.
