I just tried the Morningstar Farms "steak" strips in fajitas--YUM!
1 flour tortilla (small)
8 veggie steak strips
1/2 ancho pepper, cut in strips
1/4 onion cut in strips
Lawry's fajita seasoning to taste (in the packet seasonings section) or your favorite fajita seasoning
salsa
fat free or low fat sour cream (optional)
Exchanges:
2 meat substitute
1 veggie
1 1/2 starch
1 fat (if you use the low fat sour cream)

I love those steak strips. I had them on my salad today... toss them in a frying pan with mushrooms and shallots, then dump on top of spring greens with grape tomatoes and a bit of feta cheese.
The chicken strips are great to dice up for pizzas too. I make a mean BBQ chix pizza... english muffin, BBQ sauce, chix, sliced jalepeno stuffed green olives, pineapple chunks, top with low fat cheese and bake.
I grew up vegetarian, so I love all of the soy products. I eat meat now, but rarely cook with it. The veggie stuff is just so much easier! My hubby has even learned to like Grillers Prime because they're so darned quick!
